A 6PDT and Two DSPs in One Guitar?

So for awhile I've been pondering a Variax 700 Acoustic transplant into a scratch-build axe.  But now I'm wondering if it isn't possible to just put the Acoustic DSP into a V600 or V700 and rout the six piezo signals to one or the other DSP board with a 6PDT switch or relay.

Actually I might need an 8PDT if I am going to use the same switch to switch grounds and/or outputs - and I would probably need to up the amperage of the phantom power supply.  There are a few different types of these, as both switches and relays - and also as IC switches that I might be able to power to one set of poles (or the other) with a simple toggle switch.  But I'd need to avoid the dreaded popping, etc.

Anyone see a reason this wouldn't work (other than space issues)?  I don't necessarily need ALL the acoustic models offered by this combination, but I would like to have patches for nylon and mandocello available from the same axe as the electric guitar models.  Shame this can't be accomplished in Workbench...
