How to start from scratch building a tone

I'm fairly new to using the Amplifi pedal, and while I really love it, I can't figure out how to start with a clean slate. I want to pick my own amp and cabinet and effects, but I can't seem to get out of any number of pre-sets. 

 

Would someone here kindly give me a heads up on how to do this? I'm using an iPhone 5c (for now) if that helps.
