Globally turning off/on amp/cab models.

Is it possible to globally turn off/on amp/cab models.This may be handy when plugging into an amp or cab or even a amp/cab modeler.

Someone else may chime in but I don't think blocks can be globally assigned. What you can do is to copy an entire setlist (or just one preset) in HX edit and then save your changes. I did this yesterday since I use 4cm for live performance but only straight in for rehearsal and it makes it very easy to call up two different scenarios.

This method also allows you to edit the patch for optimal tone with a different device without destroying your original copy.

Nope... The fact the Helix allows complex signal chains with multiple amps/cabs/IRs would make it pretty tricky to have these sort of global options. Basically, other units can do it because they have a dedicated slot where the amp/cab model always goes. There's no such thing on the Helix. You can put the amp/cab models anywhere you want them in the signal chain. So having fewer global options is the trade-off for having more flexibility elsewhere.
