The first step for updating is downloading and installing HX Edit 3.0
For the sake of everyone's sanity, please do this first before asking why you can't see the new stuff. Not updating HX Edit is the reason why you can't see new stuff.

@samrichardsam You could download the version 3 Firmware "Flash Memory" to you Mac and use the Updater to perform a Local File Install - just point it at the Firmware file, click "Update" and let it get on with it. See "Choose File" button in your Updater screen shot.
