I know it is no longer being maintained, but could an old version of it prove useful for bluegrass/acoustic country types of music?

Hello everyone. Please understand I am brand new with Line 6 devices and recording equipment period. Even though I have figured out quite a bit I still know little to nothing. Example #1 I do not fully understand what compressors are, and many of these other devices. Example # 2 I may not have posted the coming question in the correct place and I am sorry ahead of time. Fact 1: So I play a lot of Country,Rock, and Bluegrass. I was talked into buying a POD Studio Interface to better learn electric guitar, record, and jam with others. I chose to go with the UX2 because of all the input and output options/features. Fact 2: I have a Neewer NW-700 Condenser MIc on the way. It will have a Phantom Power Supply with it, because more than likely my Surface Pro 3 running Windows 10 Professional can't provide enough USB power to use the on-board Phantom power that the UX2 is equipped with. My main question: Has anyone used the UX2 or any other POD Studio Interface with POD Farm in a way that a Banjo, Acoustic Guitar, Mandolin, Fiddle, and decent maybe somewhat altered vocal sounds could be recorded through a mic only and sound great? I will probably use an electric bass, but that will be the only instrument I plug in for Bluegrass music. Maybe on down the road I'll get an acoustic pickup/another guitar. I figured that the UX2 and POD Farm could probably do much better with this than just plugging the Mic into the computer and recording away. I'm trying to get an understanding and head start on all of this. I watched videos of compressors and preamp's being added in POD Farm to make a mic sound good. That is great, but its all meaningless to me. I need some understanding of why these are being selected and how to know what to choose. If it's even possible. I am also playing all of these instruments so there will not be a group of people huddled around a mic. Thanks ahead of time!
