Helix LT Volume Knob Controls DAW

Beginner question, so please, bear with me. I'm using the LT as my audio interface, and MIxcraft 9 as my DAW. At the moment, the LT volume knob is controlling the volume of everything - My guitar when recording, and tracks already recorded, is this normal?

When I'm recording a new track, there's times I want to reduce the volume of tracks already recorded in the DAW, so I can hear the guitar track I'm recording there and then more clearly - If that makes any sense? Can I make the volume knob just change the volume of the guitar input?

There are settings to specify which Outputs the Volume knob controls but you need to address this at the Input stage, not the Output stage.
 

You can use the Global Settings -> Ins/Outs -> USB In 1/2 Trim parameter to reduce the level of the signal coming from your computer. Or you can manually reduce the Volume level of the signal coming from your computer using the computer’s audio settings. Either way the level of the incoming signal from your DAW can be balanced as desired with your guitar signal.

As a beginner, it might be wise to have a read through pages 72-75 of the Helix LT 3.80 Owner's Manual which is the section that specifically covers USB Audio.
